Simple Cream Cheese Ice Cream Base

 

All ice cream needs a base, something that you put the flavor in to make it your own. It’s like a canvas for your delicious creation. There are many different types of base recipes, but this one is the quickest and easiest (especially if you don’t have heavy whipping cream.) This is the first base I ever learned how to make, so I’m sure you can get it.

 

It does not take very much time and has very adjustable quantities. If you mess it up you can just make another batch. That’s what my mom always used to do for me. Once I accidentally cooked it too long. So I asked her to fix it like she fixes everything. She started the fixing process (which I still to this day don’t know what is.) At some point she came over to me and said that it would be easier just to make it from scratch, and that’s what she did.

The bite of the cream cheese adds just that little bit of pizzazz that I think all good ice creams need. Cream cheese bases go well with fruit flavors. The cream cheese also thickens the mixture so that it becomes less icy.

Recipe

  • 4 oz Cream Cheese 
  • 2 c Milk
  • 2/3 c Sugar 

    Put the cream cheese, milk and sugar in a medium sized pot. Heat until cream cheese is melted while whisking. Once all cream cheese is dissolved, remove from heat and transfer into a container. Add any flavors or colors. Be careful not to overheat the mixture. Cream cheese curdles if you’re not careful. You can tell that this happened if the cream cheese separates and looks un-smooth.
